The best Fighter kit in Baldur's Gate 2 is the Berserker BG2 or Kensai BG2 (it depends on the player's skill). The Wizard Slayer BG2 is not only worse than unkitted, pure Fighter BG2, but is also a worst class BG2. While Barbarian BG2 is not technically a Fighter kit, it stands alongside Berserker as its equal.
In death-duels, unarmored Kensai tear armored Berserkers and Barbs to shreds due to godly damage and THAC0 BG2, but Berserker and Barbs are better generalists throughout the actual campaign (blanket immunity + Armor Class BG2).
For purely power-gaming purposes, and unless we want to dual-class, the best BG2 race to choose for these kits is Dwarf BG2. This is due to the innate regen of Dwarf imports (Con 20), and also because Dwarves net +1 saves vs. Death, Wand and Spell for every 3.5 points in the Con score (+5 at Con 18).
Fighter kit alignment should be Good for Draw Upon Holy Might.
Weapon-wise, see BG2 Best Weapons for an in-depth look, but basically, veterans roll with the Flail of Ages BG2 or Celestial Fury BG2 on-hand, and Belm BG2 off-hand.
Shields (Shield of Harmony) are situational (and for Kensai not an option at all), so it's either dual-wielding for ApR BG2 and steady-stream damage or going 2-Hander (e.g., Ravager BG2) for the big bursty numbers. Kensai wielding 1d12 Warblade BG2 is a sight to behold (and Warblades are not even the best weapon, though they do share the highest base damage weapon roll, along with Carsomyr BG2).
