This post will eventually contain all of my commentary on the implementation of Races in Baldur's Gate 3. I will update the post as info becomes available.
My BG3 commentary is not yet in-depth, as we are only in the Early Access phase of BG3 (Prologue + Act One, Levels 1-4). Expect the write-ups to be expanded upon in the future.

All but the Dragonborn, Tiefling and Githyanki are playable races in Baldur's Gate 2. However, Tieflings are playable races in Icewind Dale 2 (D&D 3rd Edition). There are also two Tiefling companions on the Infinity Engine: Annah of Planescape: Torment and Haer'Dalis of Baldur's Gate 2 (AD&D 2nd Edition). Dak'kon is the only Gith (PS:T).
Gray Dwarves aka Duergar are added by Sword Coast Adventurer's Guide and Deep Gnomes aka Svirfneblin are added by Elemental Player's Companion (along with Aarakocra, Genasi and Goliath). Many more races are added to D&D 5th Edition by publications such as Unearthed Arcana and Volo's Guide to Monsters.
Prediction: All Core races will eventually be playable races in Baldur's Gate 3. I suspect that more non-Core races will be added by means of patches, DLC and expansions.
